Availability moves with the boats and the weather. The Client Portal shows what's actually here; your account rep tells you what's actually good — including when the answer is 'take the frozen this week.' And it's how you catch the rare stuff: halibut cheeks — tender, tasty, arguably better value than the fillet — land in small lots and go fast.

Cut fresh to your spec

Whole, head-off, fillets or portions — fresh fish is cut in our Richmond plant the day it ships, so it arrives ready for your prep list, not your cutting board.

The live shellfish program

BC oysters across the flavour map — Kusshi, Effingham, Sawmill Bay, Sunseeker — plus live manila clams and West Coast mussels, tanked and turned over constantly.

The rhythm of fresh

Fresh sablefish lands one to three times a week — some weeks not at all — and it goes fast; frozen keeps your menu steady between shipments. Wild spring salmon is seasonal, and sporadic even in season. Whole rockfish runs most of the year, but by pre-order in 50-pound lots with a few days' notice, pending landings. That's not a supply problem — that's what fresh means.

The year-round backbone

Wild runs come and go; fresh Atlantic salmon arrives weekly, all year — premium head-on fish and trimmed fillets — with organic Vancouver Island spring salmon for menus that want a named farm and a story. The steady base a fresh program is built on.

The pre-order list

Some of the best things never sit in stock: fresh Boston dry-pack scallops, fresh Dungeness meat, specialty oysters, whole rockfish. A day or three of notice and it's on your truck — ask your rep what's worth ordering ahead this week.
